The Spring Festival is the biggest and the busiest traditional festival for Chinese people. The New Year’s Eve dinner is celebrated on the last evening of the year, according to the lunar calendar. In the past, the New Year’s Eve dinner was a big meal for the whole family. Every family would prepare dishes that they could not afford to eat on a daily basis. Nowadays, at the New Year's Eve dinner, people gather to experience joy and family love accompanied by the smell of home cooking. On a dining table of Northerners, dumplings are essential, whilst people in the South enjoy rice cakes, but fish is a dish seen on every table! Fish is pronounced similarly to ‘left’ (yu), which signifies: ‘May there be fortune left over every year’.
